Yum.

Summer is a busy time for us birthday-wise.  Between April and September, we have ten birthdays between my family and Keith's.  So summer makes my sweet tooth happy :)

A few weeks ago my sister threw a party for her girls, complete with all kinds of goodies.  {Pictures, including a few of Gus and Lula in their party hats, are here.}  I pitched in and used the opportunity to try cake balls for the first time.  Yum.  Seriously.  And pretty easy, if a little time-consuming.
Recipe here.  I used chocolate cake, chocolate frosting (though cream cheese would be tasty, too) and almond bark.  Very chocolatey.

This Saturday is Keith's birthday (28!).  We're starting the celebrating tonight with an in-home showing of Tron (his pick) and this amazing ice cream cake.
A sweet friend gave me the recipe after she made it for our small group and Keith shamelessly begged  offered to take the leftovers home.  It's good.  Anything with 2 sticks of butter in it has to be good.

I'm calling it "Amanda's Amazing Oreo Ice Cream Cake".  Enjoy:

1 package Oreo cookies
1/2 c. butter, melted
1/2 gallon ice cream, softened (original recipe calls for vanilla, I used cookies 'n cream)
1 (4oz.) milk chocolate bar
1/2 c. butter
2/3 c. sugar
1 5oz. can evaporated milk
1 tsp. vanilla
1/8 tsp. salt
1 (8 oz.) container whipped topping

Crush oreos and line bottom of 9x12 baking pan.  Pour 1/2 cup melted butter evenly over oreos.  Spread softened ice cream on top and freeze until set.
Combine chocolate, 1/2 cup butter, sugar, evaporated milk, vanilla, and salt.  Boil for 4 minutes.  Let cool and pour over oreos and ice cream.  Layer whipped topping and freeze before serving.  Top with sprinkles, chocolate shavings, or oreo crumbles if desired.
